Exploiting waste stream and whole grains to enhance the nutritional properties of ready to eat products

Description of Research

Currently I am working on a project that will incorporate waste stream material and whole grain material into a snack product that will give added nutritional value to the snack. This is an extension to my previous research conducted in New Zealand and will lead to the production of snack products with improved nutritional qualities.

Biography

I completed my MPhil. at Massey University (NZ) in 2008 where I researched the possibility of lowering the glycaemic loading of extruded snack products. This led me into an interest in terms of the possible effects on the glycaemic impact of foods from the incorporation of dietary fibres into high carbohydrate food products. This research led to several publications and attendance at key food and nutrition based conferences. Previous work experience includes acting as a research technician at University College London into photosynthetic pathways of dicotolydens and as a research assistant at Plymouth University in relation to cereal food products.
